When do the winter seasonal schedules load into the system?
 
Need to plan a trip to Jackson Hole for Thanksgiving. :D

Sometime in May. It varies each year, some years early May, others mid May.

BTW, schedules are always loaded in the night between Saturday and Sunday (CT), so checking once a week after Sunday is all you need.

How can you tell that schedules <aren't> loaded? (or is this a seasonal route?) When I search AA.com I see schedules through the rest of the year and into next year... having said that, I know there will be aircraft and schedule changes farther out, but I assume the tentative schedules are "loaded"?

Yes, you will see schedules for year-round flights for the next 329 days.

But not if you are looking for seasonal service to places like JAC (Jackson Hole) or EGE (Eagle/Vail) which are both ski and summer vacation destinations and only have flights during the summer and winter. No flights to those destinations between mid/early April and mid/late May or late September and mid November.
