You can get all this information from Expertflyer. You pay a monthly fee of 9,99 USD and you have access to all inventory information on all flights in Amadeus (I believe?)

I use it quite often to plan upgrades on long haul flights. Very useful tool, I find.

I'm looking at kl736 which shows the following availability:
J7 C5 D5 I0 Z0 Y7 B5 M5 U5 K5 H3 L0 Q0 T0 E0 N0 R0 V0 G0 X0

Does this mean that there are max. 7 seats in economy available on this flight at this given moment? Or are the total available economy seats the sum of all buckets for economy?

Max 7 economy seats available to sell on this flight.
If I were you I would want to check-in immediately when it opens, there may be some good offers.

I need help. Looking to fly ZED from AA on AF65 LAX to CDG on 8/24/17.

If an AF employee can look from the inside then even better. I can't see loads in myIDplanner. Thanks

I don't know of any AF employee that can look "from the inside" and provide the details here, the load is:

KL603 AMS-LAX on 2nd september 17

I am in PE (as plat) but wondering for upgrade as I have a flight to RAR after I come to LAX in economy.

Well, there are at least 6 ticket to sell, including 2 in the cheapest bucket, if you consider KL will overbook J, it probably means there might be 4 or 5 actual seats still available, not including last minute cancellations.
Based on Y availability, OLCI cash upgrade is likely to be very expensive, however I would definitely give a call to the plat line to check for mileage upgrade options.
