I would book it if I know that I am protected (a single ticket) with another CDG-BCN in the day.
You are probably on AF689 that lands at 1050, so you have plenty of flights to BCN in the afternoon if your ATL-CDG is delayed.
That sounds like a good connection.

I wonder how AF behaves in case the flight is not delayed, but the lines at immigration are so bad that you miss the connection.

This means that "short" connections are all right, as long as the onward destination has enough flights to fall back on in case of problems.

I have never connected in Paris... Flying into 2E departing 2F... So I clear EU immigration in Paris 2E and then move on to my flight to Lisbon in 2F? I have plenty of time (about 2.5 hours) just wondering about the logistics.

You clear immigration at 2F, respectively in the airside corridor between 2E-K gates and 2F. Security clearance also there in the corridor for K and M arrivals, in 2E for L arrivals. Easy and straightforward.

There are two different duty free bags, one for regular passengers, and one for connecting passengers, which is securely sealed and the receipt attached in a small pocket that makes it visible. This type of bag is accepted pretty much at every airport security as it meets an agreed standard.

There is a common believe (and even an announcement made by airlines when arriving to the US) that if you purchased liquids at the duty free and you have a connecting flight, you must put them in your checked luggage, the truth is that TSA allows you to go through security with the sealed bags as long as the receipt shows that it was purchased in the last 24 hours. The same applies to most airports including CDG.
