One of my international flights had a vegetarian ravioli, but it wasn't because I asked for it, and I certainly didn't want it.
Don't confuse "my meal was vegetarian" with "I asked for and received a vegetarian meal".

In the first post you linked, @The Lev wrote "..no choices but tasted OK and reasonable quantity..". While the main hot meal shown was described as vegetarian ravioli, it was not a special meal nor ordered in advance, nor was he given a choice, as far as I could tell from his post.
in the second post you linked @YYZHRE wrote "...There are no other options. ..."
While food and drink on international AC is now back to plates and glasses, so far, I have not read where anyone has been offered a meal choice let alone the ability to pre-order a special meal. However, you have the option of sending a note to AC Twitter or AC Customer Support and see if they can give you a different answer. Good luck and please report back.

As mentioned by 24left, meals are served without a choice. On AC 8 yesterday, there was no menu distributed, compared to my flight in November.

AC 007 April 20
A very light load yesterday on AC 007... We were 3 in J, 1 in PE and 38 in Y.
The flight was uneventful and there was no choice for the meals.
The Laurent Perrier was nice and chilled.

I noticed this new bit on AC's site, this page

I am wondering if the protocols are different on some international routes, or it's just poor proof-reading at AC.
The first section mentions about what is included for flights departing Canada.
But then it says "For flights to Canada" and mentions a premium meal box. Looking at the photos above, the J meal looked plated even if the cheese and dessert were in covered packages. Also noted the typo and "r" missing from the item "bread roll".
Thus I wonder if this sentence refers to flights "within" Canada, where we know a meal in a box is served.

Single-digit load in J on a recent AC8 flight.
First meal was served 24 minutes after take off, no choice of mains, but was surprisingly tasty. One of the best chicken dishes I’ve had on a plane.
Mid-flight snack was a chicken frikandel roll according to the menu, but it tasted like a sausage roll. Packaged snacks and water placed in front of 1D and 1G throughout the flight.
None of the drinks that should be chilled were chilled. Room temperature Laurent-Perrier served in a large plastic cup, very generous pour. Room-temperature Perrier was provided with a small plastic cup. Saw the crew using real glasses in the galley.
No ice on board “due to Covid”. No milk for coffee “due to Covid” (crew laughed when saying this as if she can’t believe she’s saying it). No duty free “due to Covid”. Crew were friendly and chatty (thought they want to minimize contact with passengers though).
