Does it have to be AC from Asia on Aeroplan award ticket?
I'm looking at booking a reward ticket for early January from Singapore to YYZ. The only options for the second, long flight into YYZ I am seeing are with AC. How might I find a flight with a much better Asian or Middle Eastern carrier?

To my knowledge, you cannot use *A points on ME carriers.
As for the Asian carriers, only you can define what "much better" actually means. That said, you do have a choice. Off the top of my head, try looking for flights out of TPE or PEK. You should also be able to find UA flights from the usual hubs, though that does mean bouncing via the US.
If you have points to burn, try going the other way via Europe.

Yes, because that is what is available on the routings you are looking at on your dates. I just checked for different dates and most of the options are AI or CA and some UA.
On other dates, there might be some other options. You might want to be more creative and as was suggested above, look to route via Europe from SIN, or via BKK on TG. I've seen LX via ZRH, some LH via MUC and FRA (there will be high fees on some of these).
