Why not just "let sleeping dogs lie"?
What do you expect someone to do between a 14 hour flight and a 2 hour flight on a 3 hour connection? Get a hotel?
It may be a pet peeve, but I don't see how it's "annoying". They even made sure not to put their shoes on the furniture.

Because it's not appropriate to lie down across multiple seats in what is considered, in comparison to the terminal, an upscale space reserved for higher tier and business class customers. What if the lounge gets crowded and someone wants to sit down? It just looks inappropriate and it should not be happening. If they want to lie down and sleep, let them do it out in the terminal. That space is reserved for customers who are seated and eating/drinking, working, etc.
Have I slept inside a lounge in the past, yes.
QR Al Mourjan, A3 ATH Schengen, NH HND First Lounge comes to mind.
My biggest question is why would someone want to sleep literally in the smack in the middle of the cafe? 🤨
Do people not like some privacy when they snooze?

Taking two seats when it's SRO is impolite. Taking 2 seats when it's at 10% capacity is fine.

Now I have seen in DOH that staff had gone and woken people up taking more than one seat and trying to sleep.

"It's a pet peeve of mine" is very different from "it's not appropriate". For most things discussed here, I think we can all agree they're not appropriate (like sticking your hand in the pickle jar).

The cafe was not too busy at the time (although the corner by the window I considered out of commission due to someone there watching a video on their phone at high volume) and they did not cause any disturbance at all. But it's also behaviour I would never have engaged in.

Ya, behavior I'm more or less ambivalent towards.
Personally if one were to pass out in a quiet corner, theres better/quieter places to do so upstairs in Dom MLL.

This is not the first time someone has posted about sprawled-out sleepers in an AC lounge, and won't be the last.
Although not to the extent of sleeping on the floor or sprawled on a banquette, I would say I've come close to sleeping in such positions by arranging some of the lounge chairs to create a makeshift "cradle". I've also snored my butt off in the MLL... having woke myself up from a loud snort and rapidly glancing around to see if anyone heard me.
The way I see it is that if it doesn't impact me, then just let them sleep however. Blah blah.
