I HUCA'd four agents in a row last week, and each one gave a contradictory summary of the new rules, from "nothing has changed" to "everything has changed".
Agents 1 and 3 rejected my itinerary as "un-bookable", agents 2 and 4 set it up without issue.
Agent 2 declared that a 3-hour layover in IST made it an Europe 2 award, Agent 4 happily booked it as Europe 1.
For whatever it's worth, AC/AE seem to be doing an equally poor job of communicating internally as externally.
Either way, don't take one agent's answer as gospel.

My understanding is the agents still have access to the legacy system but they are only supposed to use that for existing reservations prior to the switchover.
Were you able to get any of those actually booked? What an agent says is not gospel until the computer says yes or no. This is why many of the agents are now not giving out any info until they input your routing into the system and get your AP number for tracking purposes.

YVR-YUL-IST-BRU outbound, TXL-IST-YUL-YYZ-YVR on the return.
The only downside was having to add the YUL-YYZ leg on the return - the IST-YUL flight lands just as the YUL-YVR flight is taking off, which means I would be >24hrs if I waited in YUL for the next one.

You win some, you lose some. From YVR, YVR-JNB mileage should be better than YYZ-JNB (unsure if new YYZ-JNB allows TPAC routings)

It's interesting to see that the online tool allowed me to route DXB-(CA)-PEK-(AC)-YYZ for a total of 10216 miles. I was quite surprised you could go ME-Asia-NA.
Taxes were only $167, with $125 YQ. not sure how that came out

So you could go YYZ-SYD and back with a stop each way in Europe.
FWIW AE shows plenty of availability for TG F Europe to/from SYD.

YYZ-YUL-IST-DXB-SIN-PER
shows as 13045 on gcmap which should work for YYZ-PER
if JNB is a must then you need to drop PEK and return via atlantic to fit DXB. if only ADD is a must then even YYZ-ADD-DXB-SIN-PER can probably work as its only 14770

I've read the wiki and I can't wrap my head around it.
I'd like to go to europe next august hitting Amsterdam, Vienna, Rome, London and Frankfurt.
We'd like to end in Frankfurt after a train ride from London.
