I can vouch for Alain Rolancy, definitely Michelin 3-bun (if they rated baking!). Meaning worth a special trip to visit. A lot of great suggestions on this thread; heartening to see that baking is so popular and appreciated; but this is one of the few that I would go out of my way for (by a country or continent).
