What's the difference between a "night" and a "stay"?

Thanks in advance. I'm fairly new to the hotel point game. Been collecting airline points for years but recently switched.
You can become HH Gold without spending a single night at hotel by charging at least $20,000 per calendar year on your new HH AMEX.
