Well,
there ain't much close to IAH, but if you rent a car (you can sometimes get it for $20 a day, not a bad deal), you could drive to Johnson Space Center, that could be interesting. It's about 50 miles, but should be a fairly easy drive, especially if you stay out of traffic and take the Beltway to the Gulf Freeway.
You could drive a little further (70 miles) to Galveston Island, which is somewhat interesting. It's better as a tourist spot than to live here (I know, I live here), but the beaches are nothing like south of France, and the architecture is pretty nice for Texas, but not nearly as old as Europe. Oh, we also have Moody Gardens:
