This afternoon, approximately 36 hours after I first observed the problem, I looked in the app and my new seat selection is showing.

Meaning my last attempt - or some previous attempt - from earlier today was finally actioned; I didn't have to attempt to move seats again, but rather the app finally showed the change had finally successfully been carried out.
