FYI, Hanna Suzuki is a prolific ryokan reviewer who has probably forgot more of her ryokan stays than ryokans I've ever visited. Her site has a wealth of detailed information on a huge variety of properties:

Don't let the URL fool you; the site covers a large swath of the country. It's not the easiest place to navigate, and the search function does not work property, but it's well worth browsing her site - it's extremely informative, and she does it simply to provide insight on her experiences on the hundreds of ryokans she's visited.
P.S. - I was recently chatting with her, comparing notes on our recent stays, when she remarked how visitor numbers to her website had plummeted during COVID (not a surprise), but was bummed that things hadn't picked up after Japan opened up, and her motivation to keep it updated was waning.
