I, like many others here it seems, love Hong Kong and sadly have not been back since the re-opening. But will go soon, hopefully!
For me, I am a bit torn between suggesting a habourfront hotel on the Kowloon side (like the InterCon suggested upthread), or the Conrad on the Island side - I am partial to Conrad, as the view from the top floors is also spectacular.

In either case, enjoy! I am in the "extra day is better"-camp as well

One thing I found last time is that there is a bar in what used to be the old city prison - quite interesting place, and worth visiting (I hope it still exists)
