One would need to stay at a different Hyatt that first night and then switch to the other Hyatt...and of course wait until the certificates are awarded which might take a few days.
While this is true IME and I’m guessing most travelers who’ve booked back to back stays can attest -
The one night stay would definitely post to the account and if it earns any Milestones those too would post even if you have a back to back stay book.
Why? Hyatt’s system recognizes them as two separate reservations. So when you check out of the first stay it posts 24 hours later. Then when you check out of the 2nd stay they will both be merged into one stay in your Past Activity because as you mentioned Hyatt counts it as one stay, but this isn’t done until both stays are completed.
