The new cocktails from Mr Lyan (or have they now been 'enhanced' away?) are excellent so I recommend you try at least one.
My method would be a g&t, cocktail or other classic aperitif, then fizz, wine if there's something I'm in the mood for otherwise more fizz, then a glass of port, then a dessert cocktail or digestif, then more fizz.
Hopefully by then it's time to board so I can sleep it all off.
