I-class availability opens up when Aegean expects to not sell all seats for cash. That can be some weeks before departure, and/or a few days before departure. This allows the airline to void outstanding vouchers while not missing any sales. There is no static rule, mainly it is based on sales numbers and some clever algorithms. There are services (Like ExpertFlyer) that allow you to set a notification on I-class availability to become available.
