Is there any way I can try to recoup these expenses from Iberia? Given that my ticket was cancelled 2 months after booking, I believe I have a reasonable claim that I expected to be able to travel, and I made my other bookings 1 month afterwards with my business class ticket still "live", so that story would check out
No chance. IB is not liable for such incidental expenses. You decided to cancel.
