the CDC card is widely being accepted in Paris, though it's certainly nice to have the security of the pass sanitare if you can get it (my application came through 3 days into my trip at which point I stopped relying on my CDC card - but before doing so I had no trouble with the CDC card at a wide range of establishments from random bistros and cafes to museums and even nightclubs.)
