I assume the meal service would be absolutely fine as the UD has its own galley. Actually, when the -400s originally arrived they had Economy upstairs. No expert on seat fitting (and differences between UD and LD) but might be a simple fix if you can reuse the outer rows of 3 from the retired 744s and put them on the UD? If it is indeed happening and indeed on the UD, the concept seems to make sense as it's a pretty efficient capacity increase - CW on the UD has masses of unused aisle space whereas a Y config fills up most of it.
