I was expecting a chargeback to be successful via my BA Amex if BA were unable to fulfill their part of the contract, too, although that is perhaps naive.

Please see my reply to PeaSouper above. If BA cancelled the flights, you WILL get a refund if you request a refund rather than rebooking.
If you booked it as a BA Holiday package, I'd expect the hotels and other associated components to be refunded as well.
