Borgata offers me $49 before taxes and fees per night, a $30 per night rebate off their regular rate. (I don't gamble. I am M life Sapphire with just a few hotel stays at Aria and Bellagio over the last few years.)

Should I go for it or is the "maximizing" way to do the status match to total rewards and then stay based on an offer I'll receive from Caesars?

Sorry if this is a bit of a n00b question.
Not sure I completely understand what you're asking, but you can do the Hotel Chain X Status -> Wyndham Diamond -> Caesars Diamond all online without physically going anywhere.

But real talk: Caesars is not going to invite you (especially proactively) to come stay for free just because you're a status-match diamond (especially with no casino play). you might be a diamond status, but Caesars knows you were a status match. Your rates might get a little better though!

Once you have that Caesars Diamond card, you can use it to status match at (specifically) the MGM Borgata to MGM Gold. That's worth it if you were going to be in Atlantic City anyway. I don't think you'll offer you a free room since you were already an MGM member prior to joining. While you're there you might as well also match it to Hard Rock Casino's Rock Royalty. I think that'll get you a free night with them?

After all of that, don't forget to status match MGM Gold -> Hyatt.
