If bought through AC then it is almost certainly 1 ticket so you would be protected if the BKK flight was late and you missed the YYZ flight so you would be rerouted to YYZ ( not sure of the routing options/airlines HKG-YYZ).
There may be staff at the gate ( not sure if it would be Air Canada staff or the locally contracted agents dealing with AC)

AC has (If I remember correctly, HAS) contract agents at HKG but wearing AC uniform and are pretty familiar with AC rules.
