They did, but they kept the pens. People still use the pens for signing for non card things like for alcohol (AZ has some weird setups, you sign at Safeway to affirm you’re over 21)
Speaking of weird stuff, the Vons pharmacy apparently still uses MX800 series terminals for signing for prescriptions (or at least has them still facing customers, anyway).
