One of Canon's compact DSLRs like the SL3 and their 24mm/2.8 pancake lens. Super lightweight go-anywhere setup, optically great and an excellent walkaround focal length (equivalent to 35mm).
I've gone on multiple trips with nothing but that lens. Leaving everything else at home is incredibly freeing.
