Considering how are are upgrades are on Transcons flights, they clearly are selling F. Why not everyone will shell out extra bucks for lie flats is probably due to many people just not seeing the extra cost is worth it over a perfectly comfortable seat.
Alaska has a monopoly on some non-stop routes for their F product. Though I think United is now flying premium economy, similar to Alaska F, on some of their lie-flat routes.
