Airline Catering and Consistency

I wasn't sure whether to put this here or under the DiningBuzz sub-forum, as that one seems to be more about restaurants.

Almost all airlines utilize catering companies to provide their food - Sky Chefs, Gate Gourmet, etc. Some airlines pride themselves on their food quality. How do those airlines control the quality of the food from various companies and provide consistent results? It would seem to me that there wold be a certain lack of control, as well as a certain sameness, introduced by having just one set of cooks providing the food. Does each airline have a seperate kitchen facility in the caterers plants?
