we will prob have three large pieces of luggage with one carryon and one personal item.

Any recs? Do we check luggage into the bullet trains?
Some important clarifications to really provide good advice...

Where are you coming from prior to departing from NRT? Presumably somewhere besides Tokyo, based on your phrasing? If so, how are you traveling to Tokyo - specifically trying to narrow down your arrival point into the city. The reason for asking is that recommending a hotel in area X may end up being inconvenient if you're arriving into area Y from elsewhere in the country.

What is your budget range for the hotel for that night?

Will you have a JR rail pass valid on that last day that you're planning to use for final rail transport to the airport?

Limo bus is an option but depending on your starting point, the two dedicated airport express train services are faster and not subject to traffic delays (and for the N'EX, no extra cost if you have a rail pass valid that day). Tokyo train stations are extremely user-friendly to navigate even as a first-timer, with clear bi-lingual signage. The airport express trains have luggage storage at the entrances to the cars for suitcases and overhead shelves for carryons. Note the Shinkansen (bullet) trains don't service NRT.

Don't know about your travel during the trip but if you're already set up for taking the bags and the kid on trains around Japan before you get to NRT to return home, then you likely aren't concerned about one more quick train trip to the airport. You'll see other families with young ones doing just that. But if you're traveling through some other means and/or don't want to juggle all of that in getting to NRT, you may prefer the limo bus. In any case, whichever option you end up using, more details would help with more relevant hotel recommendations.
