UA's most recent Polaris configurations (aside from the 76L) have about 22-25% of the total Y seat count as E+, down from 30-50% in earlier configurations. Given that ratio, for both the 788 and 789, I would expect 36-45 E+ seats.
For the 788 and 789 reconfigurations, I would use the 787-10 layout as a clue to how they'll come out, especially forward of A-zone, and I would expect E+ to go to 34" pitch and E- to 31". The 788s will probably get new Y seats in the style of the 787-10s (RockwellCollins Aspire). I am assuming UA is cramming 28 Polaris seats into A-zone on the 788?
I'm interested to see the LOPAs.
