Hotel transfers are running 7/24. An e-mail reservation would minimize your wait for the shuttle at the airport; if you decide to book your hotel room on the spot, you would wait more. The hotel room would include breakfast, lunch and dinner depending the time of the day. Also, if you want to cut the wait time for the hotel shuttle (which may be with other people to different hotels in the area) and don't mind paying taxi yourself - tell the hotel desk that you will get transportation yourself. They will then hand you the hotel voucher - which should also state whether any meals are included. At least, that's what I always did at Atatürk - now obviously from the new airport, taxi trips are longer and taxi costs therefore higher.
