Can I change my leg back to US to be in F if I find space? Our flight to NRT would be in J, but our flight back would be in F - is that allowed?

Simple answer is 'NO'.
You can't change a ticketing class after ticket issued.
You can book mixed classes (outbound Y, and inbound F etc), then ticketing.
You can change your booking to lower class after ticket issued. But mileage difference isn't refunded.
You can change your booking to higher class if ticket originally issued at that class.
