I'd definitely do LAS. There are 8 nonstops each weekday LAS-SMF (versus only one DAL-SMF), so if there's a disruption on the connecting leg, there are a lot better options for rebooking.
And there is the answer. Not having backup options would make me avoid DAL.
You might get better answers if you said WHERE you were originating from vs "east coast".
