It is not quite clear what is it that Hilton Honors is not allowing you to do. If a standard room is available for all 5 nights in a row, just cancel and re-book. But from your initial post it seems that there is no standard room availability for the Sunday night. Are you trying to have them book you into a higher room category? If yes, that won't work. If it is a standard room ten it is OK that it costs a different amount of points on different dates, you'll still receive the 5th night free but the overall cost will be a bit higher.
