So long as you are no more than an hour late you will be fine on this. You have to go through security, which is as efficient as it is short on smiles. The trick in my opinion is to select carefully which security point to use, generally the end of pier ones are faster than the main ones at the front of the building (low gate numbers). Have a look at the HKG arrival map on their website to see where they all are. I have made connections at HKG on 25 minutes thanks to BA running late into HKG, and CX / QF often start boarding at 30 minutes too, but still no problem. HKG is probably the most efficient airport on the planet, balancing size and spread of activity, it's just the bus terminal that lets the place down.

Clearly keeping hand luggage down helps, but it's just computers out (and they don't seem that bother about that either). No need to extract liquids, though if you leave a bottle of water in your bag they will hold you up briefly to retrieve it.
