Just to throw an opinion out there, we stayed at FS Chiang Mai last month (our second stay) and had a wonderful time. We liked the relaxed pace, and loved the beautiful landscaping. The Thai food and breakfast were excellent, though we didn't like the Italian restaurant quite as much.
We did one of their cooking classes and thought it was a highlight.
We're not sure when we'll be back, but we know we want to return for a third time.
