It doesn't seem possible to get business class, even when the multi-city selection shoes C, Z, J , etc., available on each segment, the final screen prices everything out into Economy class. Pricing round-trip in business class is not a problem, it is the multi-city that fails. Is there some trick, or something I'm missing on the website, to make a multi-city booking in Business class?

Assuming you are using the multicity tool, once you have selected the return sector, then on the same page scroll to the very bottom and when you see 'Pricing Options' select Business from the drop down menu. That 'might' work.
Are you looking at open jaw at origin or at destination?
Note that the multicity tool is a quite limited (eg code-share options can't actually be ticked even though they show as options) and that you may have to contact THAI for a manual quote of what you want.
