IT in Finance. I now write software for hedge funds, especially ones that expand with new offices in new cities (hence the travel). I used to do the infrastructure side of that - e.g. plug in the physical wires at new global offices.
Grabbing all the credit card cashback airmile rewards and spending bonus etc. helps too.

Anything where knowledge work is exportable and in demand. You have to find some bearable amount of enjoyment in the work though and treat the travel as a bonus.
Or maybe work for yourself from a laptop and you can be anywhere in the world whenever you want.
