Even the most Orthodox Jews can be found on other airlines which fly into/out of TLV on Shabbat. Travelers who are Shabbat observant simply fly on other days.
Its not that simple, Dovster. El Al is a Jewish-majority owned airline. Patronizing a Jewish-owned business that openly violates Shabbat poses potentially complex challenges for the Orthodox consumer.
