If you really care about the food order, they work the same way most Asian airlines do, They kind of filter around, generally front to back, and take the orders before takeoff.
If you really care, you could proactively ask for a menu early, and order right then.
But to be honest, there is really nothing special in their food selections. Whatever is the last dish left could be as good (or bad) as your ideal choice.
Seat only matters inner/outer. You are fine on that,
