I've never flown coach on Copa but in clase ejecutiva on little routes I fly PTY to MGA or SJO to MGA they get a drink, nuts and a sandwich to you in the less than an hour they have so they are pretty skilled which I suspect is the same in coach.
On YYZ-PTY it's a full service and hot food in the back. So JFK should be the same.
I doubt it's great food, mind you, so you can probably get something much more satisfying in JFK to be honest.
I have never heard them mention charging for booze either not that I listed that closely.
