They assign 2-3 days in advance (I am checking in flightaware). Actually right now they are operating only two 763. One is standing in ORD since the last Saturday.
I have a flight on Dec 27 from GRU-IAH in F. Still have some hope they can assign the 763 Polaris for my flight.
