My concern is my flight out of AMS is at 7:30am, which means I would have to catch a train at about 5am. Yes, there should not be any problem walking the streets of Amsterdam at this time. There might be a few drunk people around, but that should not be an issue if you just mind your own business.
I would not bother to get a taxi just to the station (I even doubt if any taxi would want to take you for that short ride).
Though I would say if it is just a one night stay, I would just stay at one of the airport hotels and train it up and down to Amsterdam if you want to visit.
