If you haven't yet booked, I'd say you can stay downtown. Has all of the major chains, and if you want to splurge Grand America.
There's some great small local restaurants. Every time I've been to SLC, I've eaten at Eva and have never been disappointed:

If you happen to be there for breakfast, Vertical Diner is a fantastic vegan-friendly place. They don't seem to have a webpage, but they are reviewed on the typical restaurant review sites.
