Let's say I stayed 10 nights already at Sheraton (8 more nights to go to hit Platinum) and got my SPG Gold status, understand that if I link my SPG account to my RC account at this time, it may take about 24 hours for the upgrade of status to show.
However, my question in this case is once the RC account shows Gold status due to the status match, would the same thing happen when I completed my remaining 8 nights at Sheraton to get my SPG Platinum?
I guess the other way to ask this is would linking my accounts up in the midst of a Platinum challenge mess things up? Would RC require me to go get to Platinum the conventional way if I link up the account half-way through the challenge?

Linking up your accounts will not mess things up. It is stated in the T&C:

"Timing of Status Matching. Updated elite membership status will become effective (i) immediately after Program accounts are linked or (ii) within 24 hours after a new elite membership status in one of the Programs (whether an increase in status or a decrease in status) is reflected in his or her Rewards Program member account or SPG Program member account."
