I wouldn't select one property over another based on perks/benefits...I would select based on the hotel's immediate location and its location relative to other activities/interest.
I would flip the reservations and stay 3 nights at the IC and a night at the Hyatt. The IC is more conveniently located and assessible but the Monterey scene is not for everyone. One can spend a few days there without a car. A car will be required to do anything off property at the Hyatt...expect lots of traffic and tough parking everywhere.
Scooting out of town on Sunday is a good idea.
ETA: rent a kayak in Monterey. Totally worth it!
