The issue is that it needs someone more guru than me to have a look at what's causing the drop outs and tune it appropriately. The kit it's on should easily scale - it's more the tuning of the db/web config.
Let me know if you're still looking for someone to help out. I use MySQL and Apache daily
Have you considered switching to nginx?
