That depends on the kind of fare you have bought and how restrictive it is. The most restrictive fares are limited to specific trains. So if you were to make your own way to Utrecht and then caught the same train(s) from Utrecht onwards as your original reservation, you
should be OK. If you have seat reservations, there is a chance that the conductor may remove the label indicating a seat is reserved, but considering the short journey time between Amsterdam and Utrecht, it is unlikely tnat you seat will be allocated to someone else. YMMV, of course.
