Thanks! OK.. So I was able to "hold" QR, EY and again EY to LAX on consecutive days. I was able to complete the QR itin to PHX but still let it stay on hold, since my preferred date was couple days later. Finally with all these still on hold, I was able to complete the itin on the date I really wanted, with EY to LAX and then AA to PHX, 2J and 2Y. When I actually bought the tickets, I had the agent cancel all other hold as they suggested that this might confuse the system and I might lose my confirmed tickets. I was planning to cancel the others anyway.

Agreed. These reservations would be in conflict as you can't possibly fly both of them. However, QR flies to many US cities: LAX, DFW, IAH, ATL, NYC, WAS, PHL, BOS, so if your goal is PHX, you can investigate other connections besides ORD. Even consider Montreal.
