I was just in Nice last weekend, and while I did not stay at Le Meridien Nice I did walk past. It has a great location right on the beach and Promenade des Anglais, though it looked as if it might be a bit busy at night due to being located at the intersection of two major streets and the casino (and McDonald's) located in the building. January might be sufficiently off-season that this may not be a concern, however.
Depending on your planned activities, for Le Meridien properties you may also wish to consider the Le Meridien in Juan les Pins, about 20 minutes by train to the west of Nice (just east of Cannes).
