As a data point, I have done at least 6 FHR stays, bookings with my Canadian Amex Platinum (and providing it at check in) and then paying with my Canadian Gold Rewards Card upon check out. (for 2X MR points)

4 different Fairmonts and the Bellagio Las Vegas.
