Unless we're chip and PIN on a widespread basis I doubt that we'll have pay at the table in any significant form. For the few PIN preferring cards that they run across they'll either have the person come to the waiter's station to enter the PIN or they'll have special firmware on their terminals that disables PIN CVM support altogether.

Square has support for it but their site is less than clear as to how that works exactly.
Heavy tourist destinations like Florida, Vegas, etc. are going to have a slew of PIN-preferring foreign EMV cards. I had thought European issuers decline PIN bypass at chipped terminals (only magstripe)?
